At home, when we prepare dosa batter, for the first few days the batter is used to prepare idli and regular dosa. After that, when the dough becomes a little sour, we use it to make uthappam or kuzhi paniyaram. This slightly sour batter results in a soft and spongy uthappam every time.

1) You can follow this recipe to make green chutney.

2) Take some dosa batter to make uthappam.

3) Heat a tawa, pour a ladle of batter.

4) Spread the butter and green chutney evenly over the dosa.

5) Garnish with onions, tomatoes and peppers on the dosa.

6) Sprinkle the top with bhaji masala pavement.

7) Pour some dosa batter on it.

9) Flip and cook.
