At home, I usually prepare different varieties of fried rice like chicken fried rice, egg fried rice or schezwan rice once a week.

Recently I had some frozen sweet corn and some vegetables in the kitchen, so I decided to make this simple version of fried rice.

This turned out incredibly delicious and the kids enjoyed it so much. So I thought I’d share this easy Sweet Corn Fried Rice recipe that you can also try at home for a quick and tasty meal.

Ingredients

  • Oil : Use any cooking oil of your choice to prepare the fried rice.
  • Basmati rice: Long-grain basmati rice is best suited for making fried rice.
  • Ginger and garlic: Ginger and garlic enhance the overall taste of the fried rice.
  • Green chili peppers: Green chili adds heat.
  • New onion: Spring onion adds a fresh onion flavor and enhances the taste of the dish.
  • Vegetables : I added carrot, cabbage and pepper in this recipe.
  • Sweet corn: I used frozen sweet corn. You can also use fresh sweet corn if available.
  • Salt and sugar: The salt and sugar balance the taste with a slight sweetness.
  • Red pepper flakes: Red pepper flakes add heat.
  • I am willow: Soy sauce gives fried rice its signature Indo-Chinese taste and adds a rich umami flavor.
  • Vinegar : The vinegar adds a slight tangy taste.

1) Heat the oil in a wok. Add the ginger, garlic, white part of the spring onion and green chilies to the oil. Sauté for a few minutes.

2) Add the cabbage, carrot, beans, pepper and sauté for a few minutes.

3) Add salt and sugar and mix well.

4) Brown for a few minutes.

5) Add the sweet corn and mix well.

6) Mix for a few minutes.

7) Add soy sauce and mix well.

8) Add the vinegar and mix well.

9) Mix well for one minute.

10)Add the red pepper flakes.

11) Mix well.

12) Add the cooked rice and mix well. Mix over high heat for a few minutes.

13) Add the green onion and mix well.

14) Mix on high heat for one minute.

15) Sweet corn fried rice is ready.

16) Serve hot.

  • Always use cooled rice or leftover rice for the best fried rice texture. Freshly cooked hot rice may become soft and mushy while cooking.
  • Mix everything together over high heat to get the restaurant-style flavor and slight smoky taste.
