A little spicy and very refreshing, my Watermelon Jalapeño Agua Fresca (Agua Fresca de Sandia) is my new favorite way to stay hydrated. Made simply in a blender with fresh watermelon, a squeeze of lime, and agave nectar, it’s a vibrant drink that tastes even better than it looks. It’s the perfect centerpiece for the summer watermelon season. A favorite here since 2015.

What is fresh water?

Agua fresca is a refreshing, lightly sweetened drink made by mixing fresh fruit with water and a touch of sugar – often topped with lime juice, herbs or seeds. Although it is a staple food in Mexico and Central America, it is especially popular as a cooling remedy in hot weather.

Traditionally served by street vendors, in bustling markets and in restaurants throughout Mexico, agua fresca is also a versatile companion for celebrations. Whether paired with spicy appetizers or served at a summer barbecue, these drinks are incredibly simple to make. For easy entertaining, they can even be made up to a day in advance and kept refrigerated until you’re ready to serve.

What is fresh water?

A refreshing, lightly sweetened drink made by mixing fruit, water and a little sugar, sometimes with lime juice, herbs or seeds added. It is popular in Mexico and Central America, especially in hot weather.

Common types:

  • Jamaica Water: A tangy and vibrant infusion made from dried hibiscus flowers.
  • Horchata water: A creamy and comforting blend of rice, cinnamon and vanilla.
  • Watermelon water: A light and refreshing classic made with fresh, juicy watermelon.
  • Pineapple Water: A bright tropical favorite with a sweet pineapple blend.
  • Cucumber water: An ultra refreshing option made with crispy cucumber, often garnished with a squeeze of lime.

Served on the streets by Mexico’s street vendors, markets and restaurants, agua fresca is also perfect for celebrations with appetizers, snacks or even a warm-weather barbecue. They are so easy to make and can be made up to a day in advance and stored in the refrigerator until ready to serve.

How to choose the perfect watermelon

  1. Look for the “Field Spot”: Turn the melon over and look for a large creamy-yellow spot. There it lay on the ground and ripened in the sun. If the spot is white or green, it was picked too early and will not be sweet.
  2. The “heavy” test: Pick up a few melons of the same size. Whoever looks the heaviest is the winner. This means that it is full of water and has not started to dry out inside.
  3. The knock test: Give the middle of the watermelon a firm blow with your knuckles. A ripe one will have a deep, hollow “thud” sound. If it looks dull or flat, it’s probably overripe or mealy.
  4. Tip: As you watch, keep an eye out for “straps,” those dry brown veiny lines on the skin. Although they may look like blemishes, they actually mean that bees have touched the pollinating flower multiple times. The more straps, the sweeter the fruit!

Fresh Spicy Water

I transformed a classic watermelon agua fresca into a refreshing, alcohol-free version of a spicy margarita. After tossing and draining the fruit, freshly sliced ​​jalapeño gives a subtle “kick” that keeps everyone guessing: it’s just a slight warm tingle on the back of the tongue.

Pro Tip: It’s easy to make kid-friendly! Simply set some watermelon juice aside before adding the jalapeño, then add the lime and agave for a sweet, no-heat treat the whole family can enjoy.

Sweeteners

  • Granulated white sugar: The most common choice. It has a neutral flavor that lets the fruit shine and dissolves easily when mixed with the fruit and water.
  • Piloncillo (Mexican unrefined cane sugar): This is the most “authentic” traditional choice. It is sold in hard cones and has a deep, earthy, caramel-like, molasses-like flavor. It goes wonderfully with tamarind or hibiscus (Jamaica).
  • Dear: A great natural option that adds a floral note. This works particularly well with the Melon (Canteloupe) or Cucumber versions.
  • Agave nectar: Since it is a liquid and comes from the same plant as tequila, it is a very popular “modern classic” for Agua Fresca. It dissolves instantly and has a gentle, clean softness.
  • Simple syrup: Professional sellers often use it to ensure that the sweetness is perfectly uniform throughout the drink, without any undissolved granules at the bottom.

To filter or not to filter

The name Agua Fresca literally translates to “fresh water,” and in this case, it’s the refreshing “water” of watermelon. I prefer to strain the mixture to achieve that light, smooth consistency that defines the traditional drink. However, the choice is entirely yours: if you prefer a thicker, more textured drink with all the fruit fiber included, feel free to skip this step!

Add alcohol

Want to make it a cocktail for adults? A crisp silver tequila (blanco) is the perfect complement – ​​its earthy agave notes pair beautifully with the sweet watermelon and spicy jalapeño. For a smokier touch, you can even try a little Mezcal to complement the spiciness!

What to Serve with Spicy Agua Fresca

Whether you’re hosting a lively Cinco de Mayo fiesta or simply soaking up the sun with a refreshing glass of this agua fresca, you’ll definitely want some snacks to match the festive mood. Mexican Popcorn is the perfect light companion – freshly popped and topped with vibrant spices, lime zest and salty Cotija cheese.

  • 2 pounds (1kg) watermelon flesh Bark removed and cut into cubes (don’t worry about the seeds, they will be drained)
  • 3 tablespoons agave nectar or honey, adjusted to your preferred sweetness
  • 3 tablespoons fresh lime juice
  • 2 jalapeños sliced, seeded
  • Sprigs of fresh mint for decoration optional
  • Place the watermelon, lime juice, and agave in a blender and blend until completely smooth.

  • Pour the mixture through a sieve into a pitcher, using a fork, squeeze the pulp and extract each piece of juice. Straining is optional, but it’s the best way to get that silky, smooth finish if you’re not a fan of pulp.

  • Stir in the jalapeño slices and refrigerate for at least 30 minutes to allow the heat to gently infuse the juice.

  • Pour into short glasses and garnish with a slice of fresh jalapeño and a sprig of mint.
