For us, beetroot halwa is particularly close to our hearts as it is a Diwali tradition at home. Every year, Amma prepares a large batch, and we enjoy it fresh and hot, straight from the kadai.

Sometimes we combine it with a scoop of vanilla ice cream, and this hot-cold combination is pure joy. Simple, warm and full of nostalgia, this halwa is more than just a dessert. The natural color of beetroot makes this halwa so attractive.

The recipe is similar to carrot halwa but starts by grating the beets using a fine grater. Sauté them in ghee and cook them in milk. Once cooked, add sugar and ghee and cook until the ghee separates. You can add cardamom or saffron for flavoring. Garnish with fried nuts and dried fruits for added flavor.

Beet – Choose fresh, firm beets to make halwa that makes all the difference. Remove the skin and grate the beets using a fine grater so they cook faster.

Sugar – you can add more or less depending on your taste.

Milk – I like to cook beetroot in milk for its rich taste. For an even richer taste and texture, you can add crumbled khoya.

Ghee – use pure ghee to prepare halwa, which enhances the taste and texture.

Nuts and dried fruits – I used cashew nuts, golden raisins for the halwa. You can use any nuts you like.

Flavors – When it comes to aroma, add cardamom powder to enhance the taste.


Step by step photos

1) Take some beets, wash them very well.

2) Cut the ends of the beets. Remove the skin using a vegetable peeler.

3)Grate the beets using a fine grater. Put that aside.

4) Heat 1 tablespoon of ghee in a pressure cooker. Add the beets and fry until a raw smell comes out.

5) You need to saute for at least 5 minutes to remove the raw smell.

6) Now add milk and pressure cook for 2 whistles.

7) Leave to simmer on the stove and cook for another 10 minutes. Turn off the heat and let the steam escape on its own.

8)Now the beets are cooked.

9) Now heat 2 tbsp ghee in a pan, add cashew nuts and fry until golden brown, now add raisins and saute for a minute.

10) Fry the nuts until golden brown.

11) Remove the nuts to a bowl.

12)Now in the same ghee add cooked beets and sugar.

13) Continue cooking until the mixture becomes thick.

14)Continue cooking, it will start to come out of the sides.

15) Now add one teaspoon of ghee and mix well.

16) Let it cook in the ghee.

17)Add another teaspoon of ghee and cook until the sides of the pan are left.

18) The beetroot halwa is ready.

19)Add the cardamom powder.

20) Add the fried nuts.

22) Mix well. Your halwa is ready.

23)Serve the beetroot halwa.
