Brownie Pudding is a decadent chocolate dessert that’s somewhere between a brownie, lava cake, and pudding. The outside is crispy and crackly while the middle is gooey and melted. The recipe first appeared on Barefoot Contessa in 2008 and recently blew up on the internet.

Brownie pudding completely took over my Instagram feed, and as soon as I saw it, I knew I had to make it. I didn’t wait long, I went straight to the kitchen and honestly, I’m so glad I did. What came out of the oven was pure chocolate.

This is an Ina Garten brownie pudding recipe that first appeared in 2008 and has made an appearance again now. The recipe is easy to follow and uses simple ingredients like eggs, sugar, vanilla, flour, cocoa and melted butter. Ina Garten adds 1 tablespoon of raspberry (raspberry liqueur) to enhance the fruity notes of the chocolate. You can skip it if you don’t have it, and the dessert is still amazing. But I used 1 tbsp of coffee to give an intense chocolate flavor.

Even though the ingredients and recipe are similar to those of a brownie. What makes it different is that the eggs and sugar are beaten until thick and pale, which helps form a shiny crust. Second, the dough is placed in a water bath (double boiler) during cooking to ensure even cooking and that unique melted center. Third, cook at a low temperature for a long time, which gives you a setting on the outside and a pudding like inside.

Brownie Pudding tastes best served hot with vanilla ice cream which is the most popular way. You can top them with whipped cream for a light taste.

This brownie pudding blew up the internet for a reason. What I loved about this brownie pudding is that the outside is crackly and crunchy while the center is so gooey and melty. It has an intense chocolate flavor, almost like a sticky pudding texture, which is best with ice cream. This is very similar to my self-sauce chocolate pudding.

Ingredients

Eggs – use extra large eggs for this recipe, there is no alternative to eggs.

Sugar – granulated sugar is used in this recipe which gives the sticky texture. You can use brown sugar but this may alter the texture.

Plain flour – very little flour is added to the pudding, making the center so gooey and sticky.

Cocoa – use unsweetened cocoa powder and try to get the best quality because the taste of this dish depends solely on the cocoa you use.

Coffee & Vanilla – purely for flavor and taste.

Butter – the unsalted butter is melted, cooled before being added to the dough.

Step by step photos

1) Preheat oven to 160 degrees C (325 degrees F). Melt the butter in a saucepan and let it cool before using it. Generously grease a 5×7 baking dish with butter and set aside.

Take eggs, sugar, vanilla in a bowl. Use an electric mixer to beat until pale, light and fluffy.

2)This step takes at least 4 to 5 minutes. Sometimes it may take longer.

3)This is what the foamy mixture should look like.

4) Now add the brewed coffee and mix until well combined.

5) Now add the plain flour, cocoa powder and mix using an electric mixer until well combined.

6) Use a spatula to scrape the sides and bottom so everything is well combined.

7) Now pour in the melted butter little by little and mix until well combined.

8) The chocolate brownie pudding batter is ready.

9) Transfer it to the greased baking dish. Place the baking dish on a larger, high-sided baking sheet.

10) Pour boiling water into the largest baking tray. Fill the water until the water comes halfway into the baking dish.

11) Carefully place the mold in the preheated oven and bake for 1 hour.

12) After 1 hour, remove the dish from the oven. Carefully remove the brownie pan and let it cool briefly.

13)Recover and serve with a little vanilla ice cream or whipped cream.
