Chicken samosas are a crunchy and tasty snack popular throughout South Asia, especially during Ramadan. These golden triangle beauties are filled with a spicy chicken mixture and wrapped in thin sheets of dough that are fried until golden brown. They are perfect for tea time snacks, parties or as a Ramadan treat to share with family and friends. Serve these chicken samosas hot with ketchup, mint chutney or with a cup of tea or coffee.

Chicken Samosa is a popular snack recipe. These are crispy, deep-fried triangular patti filled with a spicy chicken filling. It’s a great snack and tastes great like my Punjabi samosa with tomato ketchup.

Chicken samosa recipe. Super crispy and tasty samosa recipe with different tasting filling. It’s delicious with a cup of coffee or tea. Samosa is one of my all-time favorite snacks. I recently discovered ready-made frozen samosa leaves and I’m a total fan of them.

You just need to prepare the filling for the samosa, stuff them in it and fry or bake them. So easy. I have already shared a few samosa recipes on my blog.

Ingredients

  • Samosa leaves: I used ready made samosa leaves to hold the filling. This makes the process quick and easy.
  • All-purpose flour: A little flour is mixed with water to form a smooth paste to seal the samosa. This helps the wrapper hold the filling together so nothing escapes during frying.
  • Oil : Oil used to brown onions, chicken and spices. This helps the ingredients cook evenly and release their flavor. Any neutral cooking oil works well.
  • Onion : The onion forms the base of the filling and adds a slight sweetness to balance the spices.
  • Green chili peppers: The green chiles add heat that pairs well with the chicken. Adjust the amount based on mild or medium spiciness.
  • Curry leaves: Curry leaves give the authentic south Indian flavor which enhances the taste of the chicken filling.
  • Ginger garlic paste: Use freshly ground ginger garlic paste for a strong flavor. It infuses well with the chicken and balances the spices.
  • Chicken breast: I used chicken breast for the filling. It becomes tender and soft when cooked and absorbs spices well.
  • Spice powder: Turmeric powder, chili powder and garam masala powder are the main flavoring spices that add flavor, color and aroma to the filling.
  • Salt : Salt is used to balance the overall taste of the topping.
  • All-purpose flour: All-purpose flour is used to thicken the filling slightly and helps absorb moisture from the chicken mixture.
  • Chicken broth: Chicken broth adds rich flavor to the filling.

Step by step photos

Cooking chicken

1) take the chicken breast in a pressure cooker. Add salt, water and cover the stove. Pressure cook for 2 to 3 whistles. Let the steam escape on its own. Open the casserole dish and remove the chicken. Let it cool.

2) Cut the chicken into small pieces. Put that aside.

Make the filling

3) First prepare the filling. Heat oil in a pan, add onion, curry leaves and green chillies.

4) Add ginger garlic paste and fry for a minute.

5) Add salt and turmeric powder and mix well.

6) Add chili powder and garam masala powder.

7) Brown the spices for a minute.

8) Add plain flour and sauté for 2 minutes.

9) Saute for a few minutes until fragrant.

10) Pour the chicken stock or water over the flour.

11) Add the cooked chicken into cubes.

12) Mix well and cook until thickened.

Shape the samosa

13)Have a samosa patti. Pour the filling into the samosa patti.

14) Fold the samosa patti.

15) Keep the samosa folded.

16) Continue folding the samosa.

17) Fold this to the end.

18)Mix flour with water to make a paste. This is used to paste the samosa. Now fold like a samosa and seal the edges with flour and water paste. now the samosa is sealed.

19)seal the samosa.

20) The samosa is ready.

Fried samosa

21) Heat the oil for frying. Place the samosa in the hot oil, fry until golden brown.

22) Drain the samosa using a slotted spoon. Serve.

23) Serve hot.


Expert advice

Seal the samosa well: Always make sure to seal the edges well with the flour paste. This prevents oil from entering the samosa while frying and keeps the filling intact.

Do not overfill: Fill about 2-3 tablespoons of filling per samosa. Overfilling may crack the package and make folding difficult.

Cool the filling: Always let the chicken mixture cool completely before packaging it. This prevents the pastry sheet from becoming soggy when folding.

Air frying: For a lighter, healthier version, air fry these samosas instead of frying them. Brush the samosas with a little oil and fry them. You’ll get the same golden crunch with less oil.

Storage : Place the wrapped chicken samosas in an airtight container and freeze for up to 1 month. You can fry or air fry them straight from frozen. No need to defrost the samosas.
