Traditional fries are just potato sticks fried in oil. Although it seems easy, you need to prepare the potatoes a certain way to get crispy, textured potatoes.

But this spicy fries recipe is simple and straightforward. You need to coat the potatoes with spice powders, rice flour and gram flour. This flour coating creates the crispy texture and stays crispy longer.

Ingredients

  • Potatoes – choose potatoes that are good for frying like red potatoes. Peel the potatoes, cut them into sticks, wash them well until excess starch is washed away.
  • Spice powders – I used a combination of Kashmiri chilli powder, coriander and turmeric.
  • Flour coating – use chickpea flour and rice flour to coat the potatoes. This creates a crispy texture. You can also use cornstarch.
  • Oil – I used sunflower oil for frying. Any oil with a neutral taste is best.

1) Take the potatoes, remove the skin using a vegetable peeler.

2) Cut each potato into the shape of fries.

3) Take the potatoes in a colander and rinse them well until all the starches are removed.

4) Place the drained potatoes in a mixing bowl.

5) Add all the spice powders. I use Kashmiri red chilli powder, coriander powder and turmeric powder. You can use any spices you like.

6) Add the rice flour and chickpea flour.

7) Sprinkle a little water and mix well. The spices and flour should evenly coat the potatoes.

8) Place the potatoes in the hot oil and fry until golden brown.

9) Once fried, drain the potatoes in a bowl.

10)Now in the same oil add curry leaves and keep back. Because the curry leaves will splatter. Make sure your curry leaves do not contain water.

11)Now the curry leaves are super crispy.

12) Drain the curry leaves using a slotted spoon and add them to the fries. mix gently.

13) Serve immediately.

  • Choose large potatoes. Peel the potatoes and cut them into the shape of medium fries.
  • Spice powders like cumin, pepper, chat masala can be used.
  • Instead of rice flour, you can use cornstarch for a crunchy texture.
  • Crushed ginger garlic paste can be mixed with the potatoes.
