In the UK, sausage rolls are the ultimate on-the-go snack and this recipe gives a holiday twist to my classic homemade sausage rolls.

No sausages, sausage rolls

I’ve received a few comments asking, “Where is the sausage in these Turkey, Stuffing, and Cranberry Sausage Rolls?” » Here’s the fun part: not all sausages come in casings. By definition, sausage is simply ground or minced meat mixed with other ingredients and seasonings. In this recipe, turkey, stuffing and cranberries are chopped and mixed to create a flavorful turkey hash, then shaped like a sausage. So yes, these rolls absolutely count!

These sausage rolls really couldn’t be easier to make because the filling is already made, so the only work left is rolling the pre-made dough. There’s not a lot of cooking involved, something else to be grateful for. A popular recipe here since 2018.

Breakdown of ingredients

Leftover roast turkey
Use ground or shredded cooked turkey – light meat, dark meat or a mixture. It adds hearty flavor and makes these rolls the perfect post-holiday treat.

Stuffing (or dressing)
I love my cornbread, sage, and onion stuffing, but the one you have also works, whether homemade or store-bought. It brings savory herbs, warm flavors, and that classic holiday comfort.

Cranberry sauce
A dollop of cranberry sauce adds the perfect sweet-tart touch that balances out all the savory ingredients. In jelly or whole berries, both work wonderfully.

Puff pastry
Store-bought puff pastry makes this recipe quick and easy. Brushed with an egg wash when cooked, it becomes golden, crispy and flaky – the perfect wrapper for all those holiday flavors.

Non-traditional alternatives

You can switch things up and make these rolls with leftover ham, green beans and sweet potatoes – or even roast beef. They are also delicious in a vegetarian version with potatoes and vegetables. Truly, there are no limits with your vacation leftovers.

Serving size

The size of the sausage rolls is the size of a meal. I like to serve with a side of peas and extra cranberry sauce. To prepare a snack or appetizer, cut them in half before cooking.

Turkey, Stuffing and Cranberry Sausage Rolls

Ingredients

  • 1 sheet frozen puff pastry, thawed according to package directions

  • 1 cup leftover cooked turkey meat, chopped

  • ½ cup leftover stuffing

  • ¼ cup leftover cranberry sauce, strain the juice

  • 1 egg beaten with a teaspoon of milk

Instructions

  1. Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.
  2. In a bowl, add the turkey, stuffing and cranberry sauce. Mix well.
  3. Roll out the dough on a floured surface to 40 x 23 cm. Cut in half lengthwise.
  4. Add 2 tablespoons of the turkey mixture to the edge closest to you. Brush the egg wash on the directly opposite edge. Roll the dough over the filling until it meets the edge of the egg wash, making sure the seam is at the bottom.
  5. When all the rolls are cooked, place them on the baking sheet and brush them all with egg wash. Use a sharp knife. cut 3 slices on top of each roll to ventilate.
  6. Bake for 25-30 minutes until golden brown.
