  • ¼ cup (60 ml/2 ounces) pear juice

  • A 2.5 cm (2 inch) piece of fresh ginger, peeled

  • 1 bottle of chilled champagne or sparkling drink of your choice

  • Fresh pear slices for garnish

Instructions

  1. In a small saucepan, over medium-low heat, add the pear juice and ginger slice. Heat for about 5 minutes until you smell ginger, do not let it boil or simmer. Turn off the heat, transfer to a pitcher and refrigerate until cool.
  2. Remove the ginger slice and discard it. Pour half of the ginger pear juice into a champagne glass. Garnish with champagne (or a sparkling drink of your choice).
  3. Garnish with a slice of fresh pear.
