Today I offer you a early fact to the Mirabelles. A simple and rustic, but terribly gourmet cake which, as its name suggests, is very easy and quick to prepare, within everyone’s reach.

It is light, well fruity and fragrant, not too sweet – a pure delight! Besides, you can vary the fruit. With little flour, its texture looks like that of a clafoutis.

Ingredients (for a 22 cm round mold; 6 parts):

Dough :

  • 3 eggs
  • 60 g of sugar
  • 1 tablespoon of Amaretto (or vanilla extract)
  • 80 g flour
  • 1 sachet of 11 g chemical
  • 250 g of milk
  • 100 g thick crème fraîche

In addition :

  • 300 g of mirabelles
  • 20 g soft butter for the mold
  • 1 tablespoon of sugar for the mold

Instructions :

  1. Preheat the oven to 180 ° C, static heat.
  2. Prepare the mold. Butter the mold and sprinkle with sugar.
  3. Prepare the dough. In a bowl, whisk the eggs with the sugar and the Amaretto, with a hand whisk.
  4. Add the flour and baking powder and mix again until homogeneity. We must obtain a smooth texture without lumps.
  5. Then dilute the dough several times with milk and cream.
  6. Prepare the fruit. Cut the mirabellers in 2 and remove the nuclei.
  7. Pour the dough into the mold and arrange over the mirabelles, with the cut side at the bottom.
  8. Bake and cook for 45 minutes or until the surface is golden. Then let the cake stand for 5 minutes in the off oven.
  9. Take out of the oven and let cool. Then unmold and sprinkle with icing sugar before serving. Enjoy warm or cold.
