When making large Yorkshire puddings, they are simply placed on a plate with roast beef, so appearance is not critical. But for this dish, we want them to be pretty canapes or appetizers.

They should look appetizing when displayed and stand upright, not leaning to the side as they often do.

Ingredients

  • ⅔ cup (85 grams) all-purpose/plain flour

  • ⅛ teaspoon of salt

  • ⅔ cup (157 ml) milk, slightly warmed

  • 1 large egg, room temperature

  • Vegetable oil

  • Slices of roast beef

  • Horseradish sauce

  • Fresh dill

Instructions

  1. In a large bowl, add the flour and salt. Whisk, slowly drizzling in the milk, until there are no lumps. Incorporate the egg. Refrigerate 30 minutes.
  2. Preheat the oven to 425°F/220°C with a rack in the center of the oven and place a CLEAN mini muffin pan in the oven to heat.
  3. Once the oven is up to temperature, add a few drops of oil to each of the muffin cups and return to the oven. Heat for 10 minutes until you start to see oil smoke.
  4. Slide the oven rack out of the oven and carefully fill each cup halfway with the batter. Carefully return the pan to the oven and bake for 8-10 minutes until golden and puffed. Do not open the door until you are finished.
  5. Remove them from the oven and place them on a cooling rack. When cool enough to handle, shape them so they can stand upright.
  6. Take a small slice of roast beef and fill each one. Add a little horseradish sauce to each one then add a little fresh dill. Serve immediately.
