Taiwanese sticky rice also known as oil or oil rice in Taiwan. It’s a comforting and flavorful recipe made with sticky rice, mushrooms, shallots and seasoned with soy sauce, hoisin sauce and sesame oil. The rice will be soft, chewy and absorb all the rich umami flavor from the mushroom and vegetable broth.

I tried to use up all the bag of sticky rice I brought back from our trip to Japan this year. I have already made a few recipes like ice cream mochi, Filipino suman and Thai mango sticky rice. Until now, everything has been a sweet recipe, so this time I wanted to make a savory dish.

About Taiwanese sticky rice

This is how I made this Taiwanese sticky rice with dried mushrooms. It’s a comforting and tasty dish. It’s so simple, easy to prepare recipes and perfect if you’re craving something warm and satisfying.

Traditionally it is made with pork or dried shrimp, but today I made a vegetarian version using shiitake mushrooms. It adds so much flavor and depth of umami taste. The main tip to get perfect sticky oil rice is to use a generous amount of oil. Brown the rice with the oil and sauces for a few minutes until toasted. Steam them, turning them often.

To prepare this dish, sauté shallots, carrots, shiitake mushrooms, sticky rice, soy sauce and seasoning with sesame oil. Mix everything until well combined and add the mushroom stock and vegetable stock. Cook until the rice absorbs all the moisture. Then transfer the rice mixture to a steamer basket lined with parchment paper and steam for 40 minutes to an hour.

Q. Can I add fresh mushrooms instead of dried shiitake?

Fresh mushrooms can also be substituted, but they will not impart the deep flavor of dried shiitake yields.

Ingredients

Toasted sesame oil – This oil has a nutty aroma that adds richness to the rice. This also helps the rice from sticking to the bottom.

Shallots – Shallots have a mild, sweet flavor compared to regular onion. I used 6 shallots, finely chopped and added to the dish.

Shiitake mushroom – The shiitake mushroom is a type of edible mushroom that has a rich umami flavor. And the water soaked in mushrooms enhances the taste of the recipe.

Carrot – 1 carrot is finely chopped and added to the rice for added texture and color. You can also add other vegetables of your choice like bell pepper, cabbage or beans.

Glutinous rice – It is the main ingredient of the recipe, which gives it its soft and chewy texture. Wash and soak 1 cup of glutinous rice in water for 4 hours or overnight.

Sauces – Soy sauce (2 teaspoons) and hoisin sauce (2 teaspoons) are added for its taste and umami flavor. You can also add oyster sauce or chili sauce.

Vinegar – Balance the umami taste with a touch of acidity.

Sugar – ½ teaspoon added sugar to balance salty flavors and enhance taste.

Seasoning – Salt and pepper powder are added for seasoning which brings out the overall flavors and balances the taste.

Vegetable broth – 1 cup of vegetable stick is added to cook the rice and adds extra flavor. You can also replace it with chicken broth.

Spring onions – Finely chopped spring onions are used for garnish, which gives a fresh aroma.

Step by step photos

1) Wash and soak the glutinous rice in water for 3-4 hours or overnight. Soak dried shiitake mushrooms in water for 1 hour. Drain the mushroom and cut it into small pieces. Reserve the soaking liquid as it is packed with umami flavor.

2) Heat the sesame oil in a pan, add the shallots.

3) Add the mushrooms and carrots, sautéed for 2 minutes.

4) Brown for a few minutes.

5) Then add the drained glutinous rice and stir-fry for 4-5 minutes.

6) Now add the hoisin sauce, soy sauce, vinegar, salt, sugar and pepper.

7) Mix well and fry the rice in the flavored oil for 4 to 5 minutes.

8) Pour in the drained mushroom broth.

9) Pour in the vegetable broth.

10)Mix and cook until the rice absorbs all the liquid.

11) Cook the rice until it absorbs all the liquid.

12) Now transfer it to a steamer basket lined with parchment paper. Distribute evenly and make several holes in between.

13) Place it on a steamer and steam for 40 minutes to 1 hour.

14) Every 15 minutes, turn the rice so it cooks evenly.

15) Taste and check if the rice is completely cooked.

16) Garnish with spring onions and enjoy.

Expert advice

  • Soak the glutinous rice for at least 2 hours or overnight. This helps it cook faster and prevents it from becoming mushy.
  • Do not throw away the soaked mushroom water, keep it aside. This liquid is full of umami flavor which adds lots of moisture and aroma to the rice.
  • When mixing the rice with the broth and sauces, use a spatula to lift and fold the rice. Do not overmix or the rice will become mushy.
  • Generously add sesame oil for added flour and it also prevents the rice from sticking to the bottom.
  • Instead of vegetable stock, you can also add chicken stock for more flavor.
  • When placing the rice in the steamer basket, poke a few holes in between for even cooking.
  • Also at intervals of 10 to 15 minutes, open the steamer, turn the rice, cover and cook until cooked.

Storage and service

Store leftover rice in an airtight container and it keeps well in the refrigerator for 3 to 4 days. And reheat it in the microwave before serving.

Serve this delicious Taiwanese sticky rice with chili chicken, grilled chicken, or with a simple vegetable salad for a complete and satisfying meal.

  • Pour in the mushroom broth and vegetable broth. Mix and cook until the rice absorbs all the liquid.

  • Now transfer it to a steamer basket lined with parchment paper. Distribute evenly and make several holes in between. Place it on a steamer and steam for 40 minutes to 1 hour. Make sure to turn them in between to cook the rice evenly. Taste and check if the rice is completely cooked.

  • Garnish with spring onions and enjoy.
