Panna cotta with blueberries – Video recipe

Today I offer a panna cotta with blueberries. An elegant, fresh and delicious dessert, not too sweet and well fruity. Perfect for cooling off when it’s very hot. In addition, we don’t have to light the oven to prepare it.

These verrines have a taste for coming back and make you want to plunge the spoon there again and again. Perfect to finish a meal or to have fun during a snack.

Ingredients (for 4 glasses of 260 ml):

Vanilla preparation:

  • 10 g of gelatin powder
  • 50 g of cold water
  • 200 g of whole liquid cream at least 30% mg
  • 50 g sugar
  • 200 g whole milk
  • 1 teaspoon of vanilla extract

Preparation for blueberries:

  • 7 g of gelatin powder
  • 35 g of cold water
  • 200 g of water
  • 40 g of sugar
  • 1/2 lime, the juice
  • a little purple food coloring (or a mixture of red and blue)
  • 250 g of fresh blueberries

In addition (optional):

  • Mint leaves for the decor

Instructions :

  1. Prepare for vanilla. In a small glass, add the powder gelatin. Pour over cold water and mix. Let swell (it takes about 10 minutes).
  2. In a small saucepan, add the cream with the sugar, milk and vanilla extract. Place on a low heat (8/14 at home) and heat without bringing to a boil (about 60-70 ° C). Mix to dissolve the sugar. Then add the swollen gelatin and mix again to dissolve it as well. Remove from heat and pour into a container with a spout.
  3. Place 4 glasses of 260 ml (whiskey glasses) on small cups, in an inclined way at around 45 °. Pour in the device, holding the glass so that it is stable.
  4. Place the glasses carefully in the refrigerator for 1-2 hours. The preparation must be well taken.
  5. Prepare for blueberries. In a small glass, add the powder gelatin. Pour over cold water and mix. Let swell (it takes about 10 minutes).
  6. In a small saucepan, add the water, sugar and lime juice. Place on a low heat (8/14 at home) and heat without bringing to a boil (about 60-70 ° C). Mix to dissolve the sugar. Then add the swollen gelatin and mix again to dissolve it as well.
  7. Remove from heat, add a few drops of purple coloring and mix. If you don’t have a purple coloring, you can mix a few drops of red and blue dyes. Pour into a container with spout and let cool.
  8. Once the white preparation is well taken, put the straight glasses back and distribute the blueberries in it. Pour over the cold liquid (!).
  9. Replace in the fridge for 1-2 hours.
  10. Serve the fresh panna cottas, after decorating them with mint leaves.
